Fresh Salad Rolls with Peanut Sauce
Yield: 6 salad rolls
Ingredients:
1 cup shrimp
1 tbsp sesame oil
1 tsp minced garlic
6 romaine lettuce leaves
½ cup shredded carrot
½ cup shredded cucumber
Vermicelli noodles
½ cup shredded cabbage (optional)
6 rice papers
Optional: fresh mint or basil
Peanut Sauce:
⅓ cup peanut butter
1 tbsp sesame oil
2 tbsp soy sauce
2 tbsp rice vinegar
2 tbsp maple syrup
2-3 tbsp water (adjust for desired consistency)
2 tsp minced garlic
Directions:
Blend all peanut sauce ingredients, adjusting water for desired consistency.
Cook vermicelli noodles by soaking in boiled water until tender, then drain.
Heat sesame oil and garlic in a pan, add shrimp, and cook until done (3-4 minutes).
Soften rice papers in warm water for 20-30 seconds.
Assemble rolls with lettuce, carrot, cucumber, cabbage, and shrimp, then roll tightly.
