Ingredients:

  • 3 cups of sweet potato (peeled & cubed into 1-inch pieces)

  • 7 cups of broccoli (chopped)

  • 3 honey garlic sausages

  • β…“ cup of basil pesto

  • 1 tbsp oil (for drizzling)

  • Salt & pepper to taste


Directions:

  1. Preheat oven to 375Β°F.

  2. Peel and cube sweet potatoes, then toss them onto a baking sheet. Drizzle with oil, salt, and pepper. Roast for 10 minutes.

  3. While the sweet potato cooks, chop broccoli and prep the sausages.

  4. Add broccoli and sausages to the baking sheet. Cook for 15 minutes.

  5. Remove the pan from the oven, toss everything with basil pesto, and return to the oven for a final 10 minutes.

  6. Serve and enjoy this quick, flavour-packed meal!
